Craft Butchery (4 Hours)

In this class, students will learn how to identify and break down whole animals into large primal cuts and smaller sub-primal cuts. They'll also learn about cooking methods for different muscle structures and joint butchery. Class materials provided, including a knife. Please register a minimum of two weeks before the class beginning date.
